Very dense and meaty not a ton of seeds. but the seeds are great for roasting. We always have a wide variety of sizes from medium sized to huge. 5-40 lbs. Named after Mrs. Elizabeth Hubbard, who shared the seeds with early settlers. Officially introduced around 1870
